I do have a seasonal appetite for a few things and it is now officially chili season for me. Saturday after we got an inch of snow then sat though a chilly afternoon college football game, it was time for chili. I made sure that there would be leftovers for Sunday too. Several years ago my friend, Linda suggested baked potatoes as a good home for leftover chili and she was right! As the chili cooked on Saturday my mind was moving ahead to Sunday and leftover chili. I baked a couple of potatoes and diced some green onion and the pathetic little tiny tomatoes I got from my garden. Shredded cheese and sour cream added some extra calories and flavor. For me Sunday dinner was even better than the Saturday chili.
